Chef Mahle’s Salmon Poke Bowl Recipe

Serves one person, double up ingredients for a dish for two people

 

Ingredients

  • 100g Norwegian salmon

  • 50g cucumber, cut into ribbons

  • 100g avocado, cubed

  • 40g edamame beans

  • 30g radish, thinly sliced

  • 20g spring onion

  • 1 tbsp sesame seed, toasted

  • 60g mixed peppers, cut into strips

  • 100g sushi rice

  • carrots, julienned

  • 100ml Mirin dressing (recipe below)

  • sesame oil

  • soy sauce

  • sesame seeds

  • sushi rice (recipe below)

 

Method

  1. Pan sear the salmon for about 5-6 minutes.

  2. Pour the mirin dressing in the pan and glaze the salmon.

  3. Assemble the dish: place the a portion of the sushi rice at the bottom and top with the salmon. Next, arrange the the avo, peppers, cucumber, radish and carrots around it.

  4. Finish with sesame oil, soy sauce and sesame seeds

 


Mirin Dressing

 

Ingredients

  • 60ml Mirin

  • 60ml soy sauce

  • 60ml olive oil

  • 30g white sugar

  • 60ml apple cider vinegar

  • 2ml sesame oil

 

Method

  1. In a mixing bowl pour in all your ingredients and whisk

  2. Transfer into a container and store

 



Sushi Rice

 

Ingredients

  • 100g sushi rice

  • 20ml Mirin vinegar

  • 20ml rice vinegar

  • 200ml water

 

Method

  1. Wash your rice until all the starch comes out, then soak it for 30 minutes in lukewarm water before cooking.

  2. Cook the rice until soft, strain the water and cool down the rice.

  3. Add the mirin and rice vinegar
