When making jams, atchars, or any type of preserve, always use sterilised jars to store them. This kills any bacteria or mold and stops it from spoiling your food.

How To Sterilise Jars
Preheat the oven to 180 °C.
Wash the jars and lids with hot, soapy water to clean them thoroughly.
Rinse, but don’t dry and place them upside down on a clean oven tray and place in the oven for 15 minutes.
Put the lids upside down in a pot of boiling water for 10 minutes.
Remove the lids with tongs and place upside down on a clean dish towel.
Spoon the hot jam or sauce into the hot jars and seal with the lids.
