Mackerel Salad

This Mackerel Salad makes for an easy, no-fuss lunch option, making it convenient for busy days when you want a satisfying meal without spending hours in the kitchen.


 

Mackerel Salad

Ingredients

  • 1 tin smoked peppered mackerel fillets

  • salad leaves, washed and shredded

  • avocado, cubed

  • Rosa tomatoes, halved

  • cucumber, chopped

  • sea salt flakes

  • black pepper

  • 1 squirt fresh lemon juice

  • pickled red onion (optional)


Method

  1. Remove the skin from the mackerel and flake. Reserve the oil.

  2. Combine the flaked mackerel with the salad leaves, avo, tomatoes and cucumber.

    Season with sea salt flakes and black pepper.

  3. Drizzle with a tablespoon of the reserved mackerel oil and a squirt of lemon juice.

  4. Top with some pickled red onion if you’re using it - it makes a yummy addition, though.
