So you've been invited to a braai and you have no idea what side dish to take along? Enter the humble but oh so popular pasta salad.
Pasta salad recipes are a wonderful side dish for main meals - especially with a good old South African braai. It’s also an excellent choice for a light meal or a lunchbox meal.
This pesto Caprese inspired salad uses very few ingredients but certainly doesn’t skimp on taste. Whip this up if you’re pressed for time and want to enjoy some bold and simple flavours.
Pesto Caprese-Inspired Pasta Salad
Prep time: 20 min
Serves: 6
Ingredients
1 1/2 cups of pasta, cooked
3 Tsp basil pesto
1 Tsp margarine
Pinch of salt
1/4 tsp garlic
Pinch of pepper
1/2 cup of cherry tomatoes, halved
1/2 cup mozzarella balls
Handful of fresh basil leaves shredded
Method
Melt the margarine and mix in the pesto, salt, garlic and pepper. Toss in with the pasta.
Fold in the tomatoes, mozzarella and basil.
Best served as a side dish.
