Sour Fig Preserve

Ingredients
1 kg sour figs
1 tsp salt
2 cups sugar
1 cup water
3-4 cinnamon sticks
Method
Soak the sour figs in enough cold water to cover the figs with the salt overnight.
To a pot add the sugar, water and cinnamon sticks. Boil the mixture until they syrup is sticky.
Drain the sour figs and add them to the syrup. Stir and bring the mixture to the boil. More water can be added if the syrup is too thick.
Leave the figs to simmer on low heat for about an hour, or until figs are soft and a bit oozy.
Cool the mixture completely and store in sterilised jars.
