    Boeta Whitey Stellenboom shares how he makes this komvandaan classic smoortjie. The quality of the worsie in very important. The trick is to use a really nice penny polony and just the right sweet flavouring – it should be on the sweet side, but not overly so. It is best to add sugar slowly until you’re happy with the taste. It must be made with love and mustn’t be rushed. I really enjoy how we have tried the pennies from a whole lot of butchers in Cape Town already. But I have my two favourites. Boeta Whitey’s penny polony or oulap worsie smoortjie 1 tbsp (15 ml) cooking oil (I use coconut oil) 2 large onions, chopped 1 or 2 chillies, to taste 3 large tomatoes, grated or finely chopped 10 penny polonies, skin removed and cubed About 3 tbsp (45 ml) sugar Directions Braise the chopped onions in the oil to a lovely brown colour, but not burnt. Add the chilli at this point. Once the onions are braised (about five or so minutes on high heat), add the tomatoes and stir to ensure it doesn’t stick to the pan or pot. Add the sugar and stir well. Add the cubed penny polonies. If necessary, add small quantities of water to ensure it doesn’t stick to the pan. After about five minutes, turn the heat down and allow to simmer until done. Delicious, served with a freshly baked bread. Equally delicious the next day but must be stored in a refrigerator. Note: Be sure to get good penny polonies, some butcheries are better than others.
